10/23 Authentic Thai Cooking: Thai Coconut Chicken Soup and Thai Salad with Ploy

Thai cuisine is full of aromatic ingredients, cooking styles, and dish decorations. In this online interactive class, we’ll make two authentic Thai dishes: Thai spicy salad (Yum Woon Sen) and Thai coconut chicken soup (Tom Kha Kai). We usually eat these two dishes with steamed jasmine rice while people outside Thailand mainly eat these dishes without rice.
Yum Woon Sen (Yum means salad and Woon Sen means vermicelli) – it tastes fresh and balanced through fresh vegetables and seasoning. The main proteins are ground pork and shrimps, but you are welcome to use ground chicken or ground turkey where shrimps could be optional. If you would like to make a vegetarian version of this salad, you can substitute ground pork and shrimps with any mushrooms. This dish is often sold on a street vendor which we consider Yum Woon Sen as Thai street food.
Tom Kha Kai (Tom means soup, Kha means galangal, and Kai means chicken) – it’s simply delicious soup and easy to make at home. The soup is coconut based and full of fresh galangal and lemongrass. Traditionally, we use chicken breast but if you would like to make this dish vegetarian, you are welcome to use assorted mushrooms. For Thai people, without chicken, we cannot fully call Tom Kha Kai. Remember, Kai means chicken.

Cook steamed jasmine rice before class if you plan to have a meal like Thai. Otherwise, please feel free to skip the rice and eat Yum Woon Sen as a salad and eat Tom Kha Kai as a soup.

Ploy Khunisorn is a native of Thailand. She went to Suan Dusit International Culinary School as a hobby while she was working as a financial analyst in Bangkok. She came to the US to pursue her Master’s Degree in Sustainability at Harvard University and Master’s Degree in Education at Cambridge College. She started teaching cooking classes in 2014, and has now taught over 3,000 students to cook a variety of cuisines from around the world.
