11/19 Mughal-Style Rogan Josh (an aromatic curried dish) with Rash

“Rogan” means clarified butter or oil in Persian, or “red” in Hindi, and “josh” refers to passion – fiery or hot – in other words, this dish is all about cooking in an oil-based sauce with an intense heat (in reference to temperature. The red colouring in Rogan Josh is often confused with either containing tomatoes or a high quantity of chillies when in fact traditional Rogan Josh does not contain tomatoes.
And while it does have some chilli in it, it is mild and draws its vibrant red from Ratan Jot (dried alkanet root). It is said that Rogan Josh was introduced by the Mughals during the royals’ frequent visits to the cool mountainous region of Kashmir, during summertime. While there is also a Pandit-style version of this dish made by Kashmiri Brahmin Hindus – during class, I will show you how to make the Mughal-style version!
