Our hearts are breaking for the people of Ukraine. We’ve launched a community fundraiser with all the proceeds going to the Word Central Kitchen which goes “wherever there is a fight so that hungry people may eat, we will be there." They’re on the border of Ukraine and Poland to help civilians escaping war.

As of the launch of this fundraiser, 1,700 hot meals of chicken, rice & veggies were served in one night on 2/25! "This is a 24-hour crossing and refugees from Ukraine are streaming through all night. This is just a start to WCK efforts on the ground!" #ChefsForUkraine

Orange & lavender breakfast buns are one of my (not only breakfast) favorites because of their irresistible flavor profile and fluffiness of the dough. A recipe for breakfast buns is complex yet simple enough to create a wonderfully delicate pastry flavored with a zesty orange, aromatic lavender and warming cinnamon. Simply irresistible

Lenka is a passionate baker & baking instructor from Slovakia with the main focus on Slovak, Eastern European & Russian pastries. Her love for baking goes back to the days when she was a small girl helping my grandma with kneading the dough on her knees. Ingredients

Dough

  • 250g Flour, all-purpose

  • 100g Milk, whole

  • 50g Sugar

  • 4g Active dry yeast or 10g fresh yeast

  • 2 Egg yolks, at room temperature

  • 45g Butter, unsalted & softened

  • 20g Oil, vegetable/ neutral tasting

  • ¼ tsp. Salt

  • Zest from 1 Lemon

Orange Filling

  • 60g Butter, unsalted & softened

  • 50-60g Sugar, white or brown

  • ¼ tsp. Cinnamon

  • Zest from 1 Orange

  • ½ - 1 tsp. dried, finely chopped Lavender

  • A pinch of Salt

Other

  • 1 Egg, whole for egg wash

  • 1 tbsp. Powdered sugar + Juice from 1 Orange

Baking tools

  • Working oven

  • Scale (working in grams)

  • Standing mixer with a hook attachment (preferably) and 2 medium-size mixing bowls if

  • Hand-kneading

  • Kneading mat (optional)

  • Rolling pin

  • Small square/ rectangular baking pan or dish (approx. 6”x6”) or small (6”) springform

  • Parchment paper cut into the size of your baking pan

  • Plastic wrap

  • A couple of smaller mixing bowls

  • Spoons & sharp knife

  • Brush for egg wash
