Tradition Kitchens is thrilled to partner with Adelya, who taught us live from Russia! Adelya grew up in the Ural Mountains part of Russia, in a city called Ufa, and has a passion for food! She says her mom is the best cook in the world, and she has been privileged to learn from her. Blinis are her mom’s specialty, and Adelya graciously decided to share the recipe with us. Blini Recipe
(yields about 15 pancakes)
Ingredients:
1 and 3/4 cup flour
1 and 3/4 cup buttermilk/kefir
2 eggs
1/2 teaspoon salt
1 tablespoon sugar
200ml water
1/2 teaspoon baking soda
Equipment:
Mixer (or egg beater if doing mixing by hand)
Large Bowl
Pancake pan (helps if it is pancake one for a quicker readiness, otherwise regular pan will do but will be slower)
Large cooking spoon to scoop up the mixture into pan
Directions:
Mix the flour, buttermilk, eggs, salt, sugar, water, and baking soda in a large bowl.
Heat some oil in a pancake pan at max heat.
Spoon the batter into the pan.
Flip when bubbles form around the pancake and the bottom is lightly golden brown.
Repeat with the remainder of the batter.
Serve with your favorite savory or sweet toppings, and enjoy!
