Tradition Kitchens had the pleasure of learning to make Russian blintzes with Olga! This recipe is from Olga’s grandmother, Rebecca. Blintzes are Olga’s go-to recipe for a late night snack, and are so simple she can make them with her eyes closed! Find the recipe and instructions below!

Blintzes Recipe
(yields about 12 blintzes)
Ingredients:
2 cups milk (500 ml)
3 eggs
3 tbsp sugar
1 pinch salt
Flour (about 2 cups)
2-3 tbsp vegetable oil, more for frying
Sweet or sour stuff to serve (sour cream, jams, honey, condensed milk, etc.)
Directions:
Add the eggs, salt, and sugar into a mixing bowl and mix with a whisk or a hand mixer until combined.
Add about half a cup of milk and 2-3 heaping tbsp of flour into the egg mixture and mix until combined.
Repeat step 2 until you have used 2 cups of milk (should be a thin batter).
Let the batter rest to thicken for a few minutes.
Add the oil into the batter and mix.
Use cooking spray or brush vegetable oil onto a hot nonstick pan or skillet.
Ladle a spoonful of the batter into the middle of the pan, swirl the batter so it covers the bottom of the pan.
Flip the blintz when you see the color darken, or when you see the edges of the pancake curling up.
When both sides are golden brown, remove from the heat and place onto a plate or paper towel.
Repeat with the remainder of the batter.
Top with your favorite toppings and enjoy!
