Tradition Kitchens was so happy to learn how to make Pelmeni, or Russian meat dumplings, from Dave. The dumplings are traditionally accompanied by a sour cream sauce, which Dave will also be teaching in the instructional video. Below is also a full list of ingredients and directions.

Dumplings Recipe
(yields about 150 dumplings, or about 8 servings)
Ingredients:
2 cups flour
2/3 cup water or whole milk
1/2 tsp salt
1 egg
2 tbsp olive oil
1 lb of 80/20 ground beef
1 1/2 tsp salt
1 1/2 tsp pepper
3 cloves of garlic (minced or grated)
1 medium red onion
Directions:
Add the egg, liquid (water/whole milk and olive oil), and salt to a mixing bowl, and beat together with a fork.
Start adding the flour, about half a cup at a time, until it forms a ball
Put extra flour on a dry surface and knead the dough for 3-5 minutes.
When kneaded, wrap the dough in plastic wrap and place into the fridge to rest for at least 30 minutes.
For the filling, puree the onion in a blender or food processor until almost a liquid.
Add the onion puree to a mixing bowl with the beef, salt, pepper, and garlic.
Roll out the dough, until almost paper thin.
Use a glass cup or a 3-inch circle cookie cutter to cut out circles of dough.
Fill each circle with about a teaspoon of the meat mixture.
To close the dumplings, bring the sides of the dough circle towards the middle, and pinch around the ends (this is more clearly explained in the instructional video). Bring the ends of the dumpling together to make a more traditional shape.
Place the closed dumplings onto a floured surface while repeating steps 8-10 until the remainder of the dough and filling are used.
Boil the dumplings in salted water until they’re done (5-7 minutes, or until they float).
Strain the excess water and enjoy!
