Karon is a public health professional who lives in DC with roots in Atlanta. She learned to cook from her family, and she spends evenings and weekends cooking and sharing her place settings with the world.
Karon has already appeared in previous Tradition Kitchens classes, and this time she'll be preparing both fried chicken tenders and biscuits while discussing soul food and the Civil Rights Movement. The class recording and recipes are below.

Fried Chicken Tenders Recipe
Ingredients:
1 cup all-purpose flour
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon paprika
Kosher salt and freshly ground black pepper
3 large eggs
Panko breadcrumbs
2 pounds boneless chicken breast, cut into strips
Instructions:
1. Preheat the oven to 450 degrees F. Line a baking sheet with parchment.
2. In a bowl or baking dish, add the flour, garlic powder, onion powder, paprika, and 2 teaspoons each salt and pepper and stir to combine. Beat the eggs in a separate baking dish. Pour breadcrumbs into a bowl or baking dish.
3. Sprinkle the chicken with 2 teaspoons salt. Dip the chicken in the seasoned flour and coat completely, then into the egg mixture until completely coated. Finally, dip the chicken into the bread crumps, making sure the chips stick to the whole surface. Transfer the chicken to the prepared baking sheet.
4. Bake, flipping halfway through, until the chicken is golden brown and reaches an internal temperature of 165 degrees F, about 20 minutes.
Biscuits Recipe
Ingredients:
1 1/2 cups of flour
1 teaspoon of salt
2 tablespoons of sugar
1 tablespoon of baking powder
2/3 cup of buttermilk
1/3 cup of vegetable shortening
Instructions:
1. Preheat the oven to 425.
2. In a large bowl, mix all the dry ingredients well.
3. Stir in buttermilk and when the buttermilk is well combined, add in the shortening.
4. Stir just until the dough forms.
5. Remove from the bowl and knead on a floured surface. Cut biscuits to desired size with a biscuit cutter or cup, about 1” thick
6. Bake until golden brown, about 15 – 17 minutes.
