Ruth Messinger has really done it all, and now, she is adding one more accomplishment to that list: teaching us how to make delicious granola! Ruth Messinger works as a social justice consultant in New York, engaged with issues of race/racism, voting rights, immigration and the environment, and teaches civic engagement and organizing. From 1998 to 2016 she was the CEO of AJWS, and she continues to serve as its Global Ambassador. Previously, she had a twenty-year career in public service in New York City. She is married to an educator and has three children, eight grandchildren and three great grandchildren. She has always been a passionate cook and foodie. 3 cups old fashioned rolled oats
1 1/2 cups raw pistachios, hulled
1 cup raw pumpkin seeds, hulled
1 cup coconut chips
3/4 cup pure maple syrup
1/2 cup extra virgin olive oil
1/2 cup packed light brown sugar
1 tsp kosher salt
1/2 tsp ground cinnamon
1/2 tsp ground cardamom
3/4 cup chopped apricots
