Hamentashen with Debbie
Hamentashen are triangle cookies filled with jam, and hold deep, Jewish symbolism
Tradition Kitchens partnered with The Breman Museum and Debbie from Red Spoon Bakery to bring you this year’s Hamentashen class. Hamentashen are triangle cookies filled with jam, chocolate, or poppy seed filling! They are eaten around the Jewish holiday, Purim, and symbolize the hat of the villain of the holiday, Haman. Debbie, our teacher for this class, was raised in the back of her mother’s chocolate shop, and has developed such a love for sweets that she started her company, Red Spoon Bakery. She now offers virtual cooking classes, and continues to bake her favorite cookie: the Hamentashen!

Hamentashen Recipe
(yields about 24 Hamentashen)
Ingredients:
2 Sticks Unsalted Butter
1 Cup Sugar
1 Egg
½ tsp Fresh Lemon Juice
2 ¾ Cups All Purpose Flour
¼ tsp Salt
¾ tsp Baking Powder
Fillings (chocolate chips, chocolate spread) or Preserves –Bonne Maman preserves is our favorite.
Directions:
Beat butter and sugar until blended
Add egg and lemon juice and beat until blended
Mix dry ingredients (flour, salt, and baking powder)
Add to mixing bowl and mix gently until a crumbly, playdough-like texture is achieved
While dough rests (20-30 minutes), preheat oven to 350 degrees
Prepare cookie sheet with parchment
Roll out dough to about ¼ inch thick on parchment using a little flour
Cut dough into circles and place 2 inches apart
Spoon 1/2 tsp of filling in the center
Pinch edges and fold over flaps to lay flat forming three corners
Bake for 12-14 minutes until lightly browned

Chocolate Ganache Filling Recipe:
Ingredients:
8 oz 60-75 percent dark chocolate (chopped)
8 oz heavy cream
Directions:
Heat the heavy cream on stove until bubbles start forming around the edges of the pot
Add the chocolate and let sit for three minutes, then stir
Refrigerate until thick
