Tradition Kitchens had the pleasure of collaborating with Muhlenberg College’s History and Sociology & Anthropology Departments to bring you this class. Our teachers are two professors, Dr. Janine Chi, a sociologist, and Dr. Cathy Marie Ouellette, a Latin Americanist. They taught us how to make Lomo Saltado, a Chinese-Peruvian, or Chifa, dish made with stir fry, rice, and french fries. Chifa came about when Chinese immigrants settled in Peru’s capital city, Lima. The food is a blend of Peruvian and Chinese cuisine, and is somewhat similar to the Americanized version of Chinese food we know and love. Fun fact about the dish: “lomo” means loin of beef, and “saltado” means the process of stir frying! Lomo Saltado
(yields 2-3 servings)
Ingredients:
Approximately 3/4 lb protein (Flat Iron Steak/Sirloin, chicken, pork, shrimp, or mushrooms)
1 medium red onion
2 roma tomatoes
1-2 serrano peppers
2 garlic cloves
1/4 inch piece of ginger
1 tablespoon rice wine/white vinegar
2-3 tablespoons soy sauce
2-3 tablespoons cooking oil
salt and pepper
handful of cilantro leaves and stems, for garnish
1 cup uncooked Jasmine rice
1 Bag Frozen French Fries
Directions:
Start with washing your rice until the water runs clear. Begin cooking your rice so it is done by the time you are done with the rest of the recipe.
Peel and mince the garlic, and peel and slice the ginger.
Prepare the french fries according to bag instructions.
Deseed and slice the serrano peppers, and slice the onion and tomatoes.
Prepare your protein by cutting about 1/2 inch thick slices, and season with salt and pepper (to taste).
Heat some cooking oil of your choice in a pan on medium low heat, and add the protein.
When the protein is done cooking, pour into a separate bowl with any juice or fat that was left in the pan.
Using the same pan, increase the heat to medium-high, and add the garlic and ginger.
Brown the garlic and ginger and add the onions. Cook the onions to your liking, then turn the flame down to medium heat and add the serrano pepper and tomatoes.
Put the protein back into the pan with the vegetables and add the soy sauce and the vinegar. Stir on medium-low heat until combined.
To plate: put the rice, stir fry, and french fries on a plate. Garnish with cilantro and enjoy!
