The dishes we will be learning to prepare are Lumpia and Turon. Lumpia is a Filipino Spring Roll (great as an appetizer or side dish — or main dish with rice). Turon is a Filipino "Banana Lumpia" Dessert. The class recording and recipes are below.

Lumpia
~15-20 rolls
Ingredients:
2 tbsp oil
1 medium onion, finely chopped
4 garlic cloves, minced
1 tsp ginger, grated (optional)
1 carrot, finely chopped or grated
1/2 cup of thinly sliced green cabbage (optional)
1 pound ground pork (you can use a package of firm tofu as a vegetarian option — or add veggies of your choice, green beans and bean sprouts are great)
Salt and pepper
2 tsp soy sauce (or coconut aminos)
1/2 cup of chopped green onions
1 package of lumpia or spring roll wrappers (we’ll use some of these wrappers for the turon recipe!)
A small dish of water (for sealing the lumpia wrapper)
1 1/2 cups oil (vegetable or canola) for frying
Sweet chili sauce (for dipping)
Instructions:
Make Filling
Heat the oil in pan over medium high heat
Add the onion, garlic, ginger, carrot, and cabbage; cook until the onion is translucent (~5 minutes)
Add the ground pork (or tofu and veggies) and cook through (~6-8 minutes)
Season with salt and pepper; add soy sauce; stir for a couple of minutes
Add green onions and mix
Remove pan from heat and let filling cool slightly
In another pan (or even heavy bottomed pot), heat the oil for frying
Fill and wrap Lumpia
As the frying oil is heating up, fill the wrappers
Take a wrapper and place it at a diagonal
Place 2-3 tbsps of the filling near the bottom third of the wrapper
Fold the bottom point over the filling, and roll it up once, tucking it slightly under the filling; then fold the outer points in like an envelope
Continue rolling the wrapper until it gets close to the top
To seal the wrapper, take your finger and dip it in the water; then wet the top point of the wrapper — this will keep the wrapper “sealed” when you finish rolling it up all the way
Fry the Lumpia
In the hot oil, you can fry 4-5 lumpia at a time
Fry for a couple of minutes on each side — until they are a golden brown
Remove and drain the lumpia and transfer to a wire rack or a platter with paper towels
Kitchen Tip: enjoy the lumpia with some sweet chili sauce!
Turon
~10 rolls
Ingredients:
4-5 bananas (or plantains)
1/3 cup of sliced jackfruit — fresh or canned (optional)
1/3 cup of brown sugar
Lumpia or spring rolls wrappers (this is a great way to use the rest of your wrappers from the pork/veggie lumpia)
A small dish of water (for sealing the lumpia wrapper)
1 1/2 cups of oil (vegetable or canola) for frying
Instructions:
Start heating the oil in the pan for frying
As the oil is heating up, slice the bananas lengthwise, and then slice them again in half
Coat the bananas with brown sugar
Place the sliced bananas on the lower third of the wrapper (if you have jackfruit, you can add a few slices along with the banana)
Fold and wrap the turon just like the lumpia, using water to moisten the top point and seal the wrapper
Fry the turon for a couple of minutes on each side until they are golden brown
Remove and drain the turon and transfer to a wire rack of platter with paper towels
Then enjoy! You can eat the turon on its own, or dip it in a caramel sauce — or even serve it with ice cream!
Kitchen Tip: if you don’t want to fry all of the Lumpia or the Turon, you can always freeze them for later!
