Genny is the Policy Chair for HYPE and loves to cook in her free time. Mangú is a traditional Dominican dish made from mashed plantains, and is one of Genny’s favorite dishes to make! Here she pairs the mangú with scrambled eggs and sautéed onions. The recipe is listed below, as well as a recording of our live class from 11/10/2020.

Mangú with Eggs and Onions Recipe
(makes 1-2 servings)
Ingredients:
4 green or yellow plantains (yellow plantains will make a sweeter dish)
2 eggs
1/2 onion
vinegar
salt to taste
butter or olive oil
Directions:
Mangú:
Peel and cut plantains into 3 chucks.
Drop in salted water— bring to a boil and until the plantains are soft.
Remove all but 1/4 water.
Mash with butter or olive oil. For creamier, use milk and mayo.
Eggs:
Fry or scramble eggs to your preference.
Onion:
Dice up half an onion and pickle in vinegar and salt.
Sauté in a pan with olive oil until it is almost translucent.
Plate and enjoy!
