Hear a bit about Rash in her own words: "I have had a lifelong affair with food - starting with my origins in Northern Borneo coupled with my South Asian heritage and South East Asian roots. I grew up surrounded by influences ranging from Northern India and across to Sulawesi - and that was just at home! By age 16, I was fortunate to have travelled most of the world which only added to my culinary exposure - and continues to."
Sarawak Laksa won the heart of the late Anthony Bourdain, where he claimed it to be "Breakfast of the Gods". It is native to the island of Borneo, and is a local speciality of the city of Kuching that dates back to the mid 1900s. Unlike other types of laksa, it boasts a mild flavour and derives its creaminess not only from coconut milk - but also from a mix of nuts and seeds, combined with a unique mix of spices, giving it a bold flavour unlike any other laksa!
"During class, I'll be showing you how to prepare this type of laksa by first making the laksa paste itself from scratch, and then using the paste to make the laksa broth. We will then add to the bowl all the essential ingredients like noodles, protein and vegetables - fill it up with the broth, top it up with garnish which is then served with a side of sambal and a lime wedge. As usual, I'll be catering for substitute ingredients and a vegan option as well!"
