We were fortunate to learn from Parul and her mother, Geeta, how to make traditional Indian foods — samosas and bonda/batata (a similar style, but gluten-free). Below are the recipes and directions.

Samosa Recipe
This recipe makes about 9 samosas.
Ingredients:
Dough
1 cup all purpose flour
1/4 cup vegetable oil
1/4 cup water
1/4 teaspoon salt (per taste)
Filling
2 potatoes (medium sized)
1 tablespoon peas (optional)
1 tablespoon chopped carrots (optional)
1/4 teaspoon finely chopped or ground green chili or jalepeno (according to taste)
1/4 teaspoon finely chopped or ground ginger
1/4 teaspoon red chilli powder
1 tablespoon vegetable oil
1/2 teaspoon amchur (dried mango powder, can be replaced with 2 teaspoons of lemon juice instead)
1/2 teaspoon coriander powder or coursely ground seeds
1/2 teaspoon cumin powder or coursely ground seeds
salt to taste
Oil for frying (we use vegetable oil but any cooking oil used to deep fry will work)
Bonda/Batata Vada Recipe
Ingredients:
Filling
2 medium potatoes (boiled and mashed)
1/2 tablespoon lemon juice
salt and green chili paste by taste (approximately 1/2 jalepeno and 1/2 teaspoon salt)
Dough
1 cup chickpea flour
1/2 teaspoon salt
1/4 teaspoon red chili powder
1 tablespoon rice flour (optional, for crunchiness)
1/2 tablespoon oil (we used vegetable oil)
3/4 cup water (to make a thick paste with no lumps)
Directions:
Mix filling ingredients
Make them into little balls
Dip balls into dough and deep fry
Green Chutney Recipe
Ingredients:
1 bunch mint (about 2 cups)
1 bunch cilantro (about 2 cups)
green chili and salt to taste (approximately one jalepeno and 1/2 teaspoon salt)
2 tablespoons lemon juice
Method: blend ingredients together with water as needed to yield desired consistency.
Green chutney (alternate):
1 bunch cilantro (about 2 cups)
1 jalepeno
salt to taste (about 1/2 teaspoon)
1/4 cup peanuts
1/4 teaspoon asafoetida (labeled "hing" in Indian stores)
1 tablespoon rice flour (optional, for crunchiness)
1/2 tablespoon oil (we used vegetable oil)
Directions:
Blend ingredients together with water as needed to yield desired consistency.
Brown (Sweet) Chutney Recipe
Ingredients:
10 dates
1/4 teaspoon tamarind paste
1 teaspoon cumin powder
1 teaspoon coriander powder
1/4 teaspoon red chilli powder
1/2 teaspoon salt
Directions:
Boil dates in 1 cup water until soft.
Let cool.
Blend together into a paste with other ingredients (including remaining water of the boiled date water).
Alternate Directions:
Substitute boiled dates with 2 tablespoons of apple butter and 1/2 cup water.
These ingredients can be mixed together with a spoon and do not need to be blended together.
