The way you fill your sandwich is entirely up to you! Zohar is making her grandmother proud by sharing this recipe- and some of her own family history- with us. Friccasé Recipe
(yields 13-15 donuts)
Dough Ingredients:
7 cups flour
2 tbsp dry yeast
1/4 cup vegetable oil, more for frying
1 tbsp salt
2 tbsp sugar
1 tbsp Arak (rum works fine as a substitute)
Suggested Filling Options:
Canned tuna (in oil)
Hard-boiled eggs
Boiled potatoes
Sliced olives
Cucumbers
Tomatoes
Pickles
Salsa
Harissa
Directions:
Mix the dough ingredients and add about 2 cups lukewarm water (add water progressively as dough forms). You'll want a soft, but not sticky dough. Allow to rise for 1 hour.
After the dough has risen for 1 hour, grab golf ball sized pieces of dough and roll and flatten it into an oval shape. Place the oval of dough onto a piece of parchment paper (cut to size). Repeat with the rest of the dough.
Let rise for another 15 minutes. Heat up vegetable oil in a pot.
While the oil is heating, prepare the ingredients for the fillings of your choosing.
Flip the oval of dough off the parchment into the oil (carefully).
When the edges start to brown, flip the dough with a wooden spoon.
When the dough is brown on both sides, place onto a paper towel to soak up excess oil. Repeat with the remainder of the dough.
When cooled, cut the donuts horizontally and stuff with the fillings of your choice.
